How to Use Veggies Before They Go Bad: 9 Easy & Delicious Ways to Reduce Food Waste

Do you have a fridge full of veggies that you bought with good intentions but once again, the veggies were forgotten or deep in the depths of the fridge and are starting to wilt, soften, and grow some fuzz? Well, you’re not alone! Life gets hectic and this happens to most people. Let’s save those veggies before they go bad and reduce food waste. Read on to learn 9 easy and delicious ways to use your veggies before they go off to veggie heaven, reduce food waste, and nourish your body!

Here are nine quick and easy ways to use up vegetables before they spoil:

1. Roast Them 🍠🥕

Roasting brings out the natural sweetness of vegetables while being a quick and easy way to make veggies. I roast almost every type of veggie out there — there are so many different ways to roast and the flavors created are amazing! All you need to do is just toss your veggies with some oil (I love to use avocado or olive), salt, and your favorite seasonings, then bake at 400°F for 20-30 minutes — you can do more or less time depending on what texture you are going for. Longer time if you prefer softer and less time if you still want some bite. Roasting is great for all types of veggies!

2. Stir-Fry or Sauté 🍜

A quick stir-fry is one of the best ways to use up a mix of veggies. Heat a little oil in a pan, add garlic and/or ginger, and toss in your vegetables. To add more flavor you can also stir-fry with a sauce, dressing, or marinade or use a blend of your favorite seasonings for a quick and flavorful main dish or side. 3. Make Snack Boxes 🥒🧀

If your veggies are a little sad but just not super fresh, sometimes giving them a quick rinse or bath in some cold water can firm them back up again. You can eat them as it or give them a quick slice and pair with a tasty dip like hummus or yogurt based sauce and pair them with cheese, nuts, or edamame beans for a quick grab-and-go snack. 4. Toss Them in a Salad 🥗

Slightly wilted greens or veggies can still work in a salad! Mix them with a flavorful dressing and top with nuts, seeds, cheese, and your protein of choice for a delicious meal. Pro tip: You can also make a warm salad with roasted veggies or even use roasted veggies for a topping for a different texture and additional flavor bomb!

5. Whip Up a Frittata 🍳

Eggs make everything better! And yes, eggs are a healthy protein choice! Dice or slice up your vegetables and mix them into scrambled eggs or a frittata for a protein-packed breakfast. Bell peppers, spinach, onions, and zucchini are my top choices and can all work great in this dish. If you are looking for a plant-based alternative, you can whip up a tofu frittata just as quickly!

6. Make a Hearty Soup 🍲

Soup is the ultimate way to rescue veggies on their last leg! Toss them in as is or give them a quick sauté and add to your broth with your seasonings, and simmer. To make a creamy soup, just toss it all into a blender and let them blend together.

7. Fill Tacos & Wraps 🌮

Chop up leftover veggies and sprinkle on top of your tacos or make a taco salad. For more flavor, sauté them with taco seasoning, and use them as a filling for burritos, wraps, or enchiladas. Add some protein like beans, chicken, or tofu to round out the meal and make it more balanced.

8. Blend into Pasta Sauce 🍝

Got veggies that are soft or slightly overripe? Even if it’s still a bit tough, you can boil to soften and then blend them into a tomato-based pasta sauce! Carrots, zucchini, spinach, and bell peppers mix easily into marinara sauce and don’t add a harsh flavor for an easynutrition boost.

9. Add to a Smoothie 🥤

Don’t overlook the power of smoothies! Spinach, kale, cucumbers, cauliflower and even carrots can blend well with fruits like bananas, apples, and berries. Add a splash of almond milk or plain greek yogurt for a nutrient-packed drink.
